Bollinger råder i alt over 3.500 egetræsfade.

A touch of mirabelle plum, plus almond, for a pure nose dominated by white fruits after slight aeration. Nice tension on the palate for a 2007 that is crystalline, delicate, and more tight than fat, which suits it wonderfully.

This has a very attractive, grapefruit and lemon edge to the nose with toasty and ripe, expressive, fruit notes that follow through to the smooth palate with an attractive, toasty build at the finish. Disgorged in November 2017. Drink now or hold.

I loved the 2007 La Grande Année, which is based on 70% Pinot Noir and 30% Chardonnay. Over 90% of this cuvée was sourced from Grand Cru sites, with the balance from Premier Cru villages. Vinified all in older barrels and aged 6 years in bottle on lees, it boasts a deep, rich, creamy style as well as full-bodied notes of ripe stone fruits, wood smoke, and spice. It has vibrant acidity, impressive length, and notable purity, all making for a classy, impressive Champagne that will keep for 10-15 years.

Bollinger's white-golden colored 2007 La Grande Année Brut is an assemblage of 70% Pinot Noir and 30% Chardonnay from 14 crus (mainly Aÿ and Verzenay for the Pinot Noir and Avize, Cramant and Oger for the Chardonnay) that was entirely fermented in barrels and aged under natural cork for more than eight years (disgorgement date: November 2016). The wine displays a very clear, fine and complex bouquet of ripe (apricot) fruits and pink grapefruit along with chalky, toasty and almond/nougat notes. Highly elegant, fine and pure but complex on the palate, this is a full- bodied and well-structured Grande Année with a long, intense yet dry, salty, beautifully clear and cleansing finish with lingering citrus flavors and a persistent mineral structure. This 2007 is still young, but its elegance, finesse, freshness and promising complexity are fabulous. Drink now and over the next 12 to 15+ years. Tasted May 2018. 2018-2030.

It might seem a bit surprising that Bollinger skipped the great vintage of 2006 for the more modest 2007. For me that choice is however quite logical since the Bollinger house style is much better suited to austere vintages than for fruit bombs. Here we have a classic and perfectly balanced Bollinger with deep layers and beautiful crisp apple acidity. Gorgeous balance between the dark and light as a perfect Ying and Yang marriage. Layers of dry cocoa, hazelnut fudge, dried apricots and juicy red apples dominate over a beautiful hint of forest aromas based on sous bois and mushrooms in the background. One of the three best Champagnes from this vintage.

30% chardonnay, 70% pinot; a blend of 14 crus; chardonnay mainly from Cramant, Oger and Avize, pinot mainly from Aÿ and Verzenay; 91% grand cru, 9% premier cru; entirely fermented and matured 6-7 months in oak barrels; aged under natural cork 9.5 years on lees; 7g/L dosage Gilles Descôtes describes 2007 as a very difficult vintage in which they took a risk and picked late. It paid off, and the wines looked good in barrel, so they declared the vintage. Twelve years on, this is the resounding evidence that they made the right decision. The best La Grande Année since 2002 has held every molecule of freshness of its release two years ago. Radiating through a glowing, bright, full straw-yellow hue, this is a succulent and enticing LGA that contrasts the tension of 2007 with the reverberating depth of Aÿ pinot noir and all the structure and fanfare of smallbarrel fermentation. Layers of spice are packed around a magnificent core of pronounced black and red cherry fruit, fig, even radiant yellow pineapple, before exploding into a universe of all that we love of Bollinger: Christmas cake, fruit mince spice, ginger and roast nuts. The depth and character of pinot noir build incrementally on the palate to profound proportions, while the creamy and silky effect of barrel fermentation caresses fine chalk minerality, flowing seamlessly into a very long, full and captivating finish of dark chocolate. Charged with ebullient freshness, effortlessdrive and magnificent mineral complexity, it promises to live long and strong.
